Place a deposit to reserve your whole, custom, 100% grass-fed, mature lamb!

What is “mature lamb”? A mature lamb (also called “hogget”) is a juvenile, usually between 11-24 months old. Because they’re older when they’re processed, their meat has a little more flavor and fat to it than lamb, and the muscles are more developed. We’re told this can result in meat that’s less tender, but our experience is that it’s just as tender as lamb. (In fact, don’t tell but we’ve actually found hogget to be our favorite…)

Our 100% grass-fed and finished hoggets are perfect for those who enjoy a slightly more “lamby” flavor and are looking to get more bang for their buck, price-wise.

Avg ~ 50 - 65 lbs hanging weight.

Price breakdown:

  1. $6 / lb on the hanging weight (avg. 60-80lbs)

  2. $220 custom cut & wrap butcher’s fee

Total: ~ $640

Total take-home weight*: ~ 40-55lbs

This comes out to about $13 / lb on the meat that you take home.

Pick up will be at Knutzen’s Meats, our local butcher in Pasco, WA.
